Gluten free chocolate-banana mugcake

I made a lovely mug cake for me and Johan yesterday when watching the first Eurovision song contest semifinals and thought I´d share this easy recipe with you. If you haven't tried mug cakes they are so easy to make! Its baked in a coffee cup or another small cup in the microwave and it only takes 2 minutes to bake it! 

Perfect for an evening snack!



Here´s the recipe:

1 mashed banana (can be old, better the softer it is)¨
2 eggs
1 tablespoon of coconut flour
1 dl of almond flour
1 teaspoon baking powder
a pinch of vanilla powder
2-3 tablespoons of coconut flower sugar (or any other sweetener)
2 tablespoons of raw cacao
I also added melted 70% chocolate since I had left-overs from the baking with the kids but this is optional

Divide the paste and put into 2 oiled coffee cups and bake in the micro wave on full effect for approximately 3-4 minutes depending on the size of the cup. (for one cup appr. 2 minutes)

Add what you like to it, I had some whipped cream and coconut flakes on top.

YUMMIE!

yum, it seems lovely! sadly i do not have a microwave, not anymore... i think that otherwise i would have tried your recipe.
i came back from a whole week in paris! i had a couple of wonderful shows (a week ago and yesterday evening), but between the two it was quite lonely and depressing... i saw some family, but the two friends i was so happy to be with, cancelled just before i left home... for good reasons (i think i would have done the same), but still..... i do not go often in paris, next time will be in novembre and for a very short trip... and one more time i felt alone. i wonder how many time it take for someone to die out of loneliness and not being comforted.... it's been years that i live this and i'm still here, so........
